I posted a picture on Instagram this week about my favorite 'cookie dough' (that's it above). I put 'cookie dough' in quotes since it is not dough you would actually bake to make cookies - it's a 'healthy' cookie dough dip. Again with the quotes. I'm not really sure how healthy it is but it HAS to be healthier than keeping straight cookie dough around (which admit it, we've ALL done this - no shame).
This recipe is made with chickpeas! It's basically chickpeas, oats, brown sugar and peanut butter but I'll list out my full recipe below. Make sure to blend it really well and I literally eat it by the spoonfuls. Or we've found we like using mini pretzels to scoop it up.
Full disclaimer: I found this recipe idea on Chocolate Covered Katie and you should definitely look at her post too for more details and other healthy recipe ideas that she has.
OK - now the good part. I place all these ingredients in my food processor and blend really well until smooth then you add the chocolate chips and you're done! My mom has also had success in a blender and said it turned out great.
1 can of chickpeas drained
1/8 tsp of salt
1/8 tsp of baking soda
2 tsp of vanilla
1/4 cup of peanut butter
1/3 cup of brown sugar
3 tbsp of oats
Splash of milk if you like
Add 1/3 cup of chocolate chips
*HAPPY DANCE*
Would love to know if you try it!
